These types of desserts are one of my favorites to make during summer. This Peach Oatmeal Crumble is super tasty, easy to make, and versatile. The crunchy oatmeal crumble topping perfectly balances out the sweet, soft, and slightly caramelized nectarines. Don't have peaches? No worries, you can use loads of different fruits instead, like blueberries or mixed berries.
Ingredients:
50g quick or rolled oats
50g flour
50g brown sugar + 10g
4 nectarines, sliced
90g cold vegan butter, cubed
juice of half a small lemon
Instructions:
In a mixing bowl, combine sliced nectarines, lemon juice, and 10g brown sugar. Set aside.
In a separate mixing bowl, mix oats, flour, and brown sugar.
Next add cold vegan butter. Using your clean hands or a pastry cutter, combine the cold butter with the dry ingredients until a crumbly texture forms.
Transfer the nectarines into a 20cm diameter round baking dish, making sure they're in a somewhat even layer.
Add the crumble on top on the nectarines.
Bake for 15-20 minutes or until the crumble on top is nice and golden brown.
Serve warm and enjoy!
