Sweet and Spicy Sticky Tofu

If you know me, you know I love tofu. Tofu is super versatile, you can use it in so many different dishes, and season it however you like. I first made this recipe for dinner one night, not really measuring anything but it turned out so tasty, I had to share it. This Sweet and Spicy Sticky Tofu is perfect for lazy weeknight dinners. It is easy to make, tasty, and served with some rice and veggies it makes for a filling meal.

Ingredients:

  • 200g firm smoked tofu, 1 cm cubes

  • 1 tbsp cornstarch or flour

Sauce:

  • 1 red chili

  • 2 tsp sriracha

  • 1/4 cup smooth peanut butter

  • 1 tbsp soy sauce

  • 3 tbsp agave or maple syrup

  • 2 tbsp lemon juice

Instructions:

  1. In a small mixing bowl combine red chili, sriracha, peanut butter, soy sauce, agave, and lemon juice. Mix until well combined and smooth. Thin the sauce with water, if needed. Set aside.

  2. Coat the tofu cubes with cornstarch or flour. Then fry in a bit of high heat oil until lightly golden brown and crispy on all sides.

  3. Add the sauce to the pan with the tofu, mix, and cook for 2-3 minutes or until the sauce thickens a bit.

  4. Serve warm with rice and veggies.
