The Best Cheesy Baked Potatoes

Comfort food for me usually involves some form of potatoes and this recipe is a family favorite, because these baked potatoes are cheesy, soft on the inside and it just gets better and better with each bite. They might sound fancy or something you would make for a holiday dinner, but that's because these Cheesy Baked Potatoes take any weeknight dinner to the next level.



Ingredients:

  • 10 potatoes, skin on

  • 100g grated vegan cheese

  • 60g vegan butter / margarine

  • 3 tbsp flour

  • 150ml unsweetened plant-based milk

  • salt & pepper

  • drizzle of oil

Instructions:

  1. Wash the potatoes and cut about 5 mm thin slices in each one, making sure to cut cut them all the way through.

  2. Place them onto a lined baking sheet cut side up. Drizzle each potato with oil and a pinch of salt. Bake for 35 minutes.

  3. During the last 10 minutes of baking time start making the cheesy bechamel sauce. In a pan over medium heat, melt the vegan butter / margarine. Add the flour and a pinch of salt and whisk continuously, until a roux forms. Then add the unsweetened plant-based milk, grated vegan cheese and whisk again for a couple minutes, until the cheese melts. The bechamel shouldn't be too think, but smooth and pourable.

  4. Take the potatoes out of the oven and evenly fill the holes in between the slices you cut in the potatoes before baking them.

  5. Bake for an additional 15-20 minutes.

  6. Serve warm and enjoy!
