Bagels are such a classic comfort food. I love to make a breakfast sandwich with vegan cream cheese, using this homemade bagel recipe, a snack with vegan butter and jam. These bagels are chewy on the inside and crispy on the outside.
Ingredients:
3 cups strong white bread flour + more to knead
240ml lukewarm water
7g fast-action dry yeast
pinch of salt
2 tbsp white cane sugar
2 tbsp brown sugar
1 tbsp baking soda
sesame seeds or any other seeds of choice to top
Instructions:
Add sugar and dry yeast to the lukewarm water, mix and set aside for 5 minutes or until foamy.
In the meantime, mix together your dry ingredients in a mixing bowl.
After 5 minutes, pour the yeast mixture in the bowl with the dry ingredients and start kneading the dough. Knead the dough on a lightly floured work surface for at least 10-15 minutes, until it's smooth and not sticky anymore.
Cover with a clean damp kitchen towel and let the dough rest for an hour at a warm place, or until doubled in size.
When your dough has risen, you can start shaping your bagels. Using your clean hands, form 5 even size dough balls and pinch a hole in the middle, then stretch each bagel out a bit.
Line 2 baking sheets with parchment paper and place the bagels on one of them.
Fill a large pot with water and bring it to a boil. Once boiling, add baking soda and brown sugar. Carefully place 1-2 bagels in the pot at once and boil for 30 second on both sides. Using a slotted spoon, remove the bagels from the pot, let any excess water drip down, before placing the bagels on the other baking sheet. Repeat this process with every bagel.
Sprinkle some sesame seeds or any other seeds of your choice on top of each bagel.
Bake for 15-20 minutes. Let the bagels cool down completely before enjoying them!
