This delicious vegan lasagne has the flavors and textures of the non-vegan lasagnes you might already be familiar with, but without the animals so it's better for the environment, better for you as well as the animals.
For the filling:
1 onion finely chopped
3-4 cloves garlic (feel free to use less, but i love garlic)
240g cooked lentils (i used a can of cooked lentils)
2 medium sized carrots, chopped into small pieces
400g chopped tomatoes
3 tbsp tomato puree
1 tbsp mixed herbs (parsley, basil etc)), salt and pepper to taste
grated vegan cheese (optional)
lasagne sheets
For the bechamel sauce:
115g vegan margarine/butter
70g flour
900ml / 4 cups plant milk
pinch of salt
2 tbsp nutritional yeast
Instructions:
To make the bechamel, add the vegan margarine/butter to a sauce pan and place over low heat. When it's melted, add the flour, mix well (with a whisk or spatula). Gradually add in the plant milk. Once you've added all the plant milk your bechamel should be creamy, if you want to it to have a cheesy flavor mix in the nutritional yeast.
To make the filling, add your chopped onion and garlic to a pan with a little veggie broth (you can use oil). Saute them until they are nice and translucent, then add the carrots, dry herbs and cook for another few minutes. Mix in the tomato puree and a pinch of salt, cook this for about 2 minutes or until it nicely browns a bit, enhancing the flavors. Add your cooked lentils, turn the heat down and cook for 3 minutes, stirring occasionally. Deglaze the pan with the chopped tomatoes and stir well, cook for an additional 5-10 minutes.
You can preheat your oven while you build the lasagne. Get an over proof baking dish and build your lasagne, starting with a layer of tomato sauce, followed by the lasagne sheets. then the bechamel sauce. Repeat this until you've filled your dish, ending with a layer of bechamel.
Bake for about 30-40 minutes. Make sure to keep an eye on it so you know when the lasagne sheets are cooked through.
Notes: if you have access to vegan cheese, feel free to sneak some in between the layers as well as well as on top.
