Vegan Sausage Pasta

This Vegan Sausage Pasta comes together in under 20 minutes so it's the perfect weekday lunch or dinner idea. The sauce is simple, easy to make, and flavorful. I love lazy but filling meals like this that I can just throw together and use up whatever veggies I have in the fridge.



Ingredients:

  • 1 yellow onion, diced

  • 4 garlic cloves, minced

  • 300g brown champion mushrooms, thinly sliced

  • 4 vegan sausages

  • 400g can chopped tomatoes

  • 300g penne

  • 2 tsp each smoked paprika, dried parsley, garlic powder, ground cumin

  • salt and pepper to taste


Ingredients:

  1. Fill a large pot with water, cover with a lid and let it come to a boil. Once boiling add a generous pinch of salt and cook the penne according to package instructions. When the penne is cooked, drain and set aside but make sure to save some pasta water.

  2. Meanwhile, sautee the onion and garlic in a pan for 3-5 minutes or until translucent.

  3. Add your seasonings to the onion mixture and cook for another minute, stirring frequently.

  4. Next, add your thinly sliced mushrooms and continue cooking until the mushrooms have shrunk.

  5. Add the vegan sausage pieces along with the chopped tomatoes. Cook until the liquid has reduced.

  6. Add your cooked pasta to the pan with the sauce, stir to coat.

  7. Serve warm and enjoy!



Notes:

I don't have access to vegan sausage, what do I do? You can skip it and use tofu instead!
