Tiramisu Crepes sounded intimidating to me at first, but the recipe is actually pretty fool-proof and only requires a few basic ingredients! Growing up I used to eat a lot of crepes, or palacsinta as we call it in Hungarian, so I knew I had to make a vegan version of them. Traditionally, crepes are served with jam or some kind of chocolate spread here, but I wanted to level it up and I came up with the idea of tiramisu crepes!
These crepes are light, not too thick and taste just like the ones I grew up eating. Usually tiramisu is made with mascarpone, but I wanted to keep it as accessible and cheap as possible. So this recipe uses aquafaba, which is the liquid from a can of chickpeas.
Ingredients for the crepes:
1 cup all purpose flour
2 heaping tbsp powdered sugar
2 tbsp neutral oil + more for cooking
140 ml unsweetened soy milk
110 ml sparkling water
pinch of salt
Ingredients for the filling:
shot of espresso
aquafaba from a can of chickpeas
3 tbsp powdered sugar
cocoa powder
Instructions:
To make the crepes first mix together the dry ingredients, then add the wet ingredients and whisk until a smooth and runny batter forms. There shouldn't be any flour lumps left. Set aside, until you make the filling.
To make the filling, whisk the aquafaba in a mixing bowl, using a hand mixer, until you get semi-stiff peaks, gradually adding in the powdered sugar and espresso. Place in the fridge to chill while to make the crepes.
Lightly oil a crepe pan and let it heat up. Once hot, using a small ladle add some of the crepe batter into a center of the pan and move the pan around in a circular motion to form a thin and even crepe. Don't worry if the first few ones don't turn out good, you'll get the hang of it! Cook for about 2 minutes on each side, until lightly golden. Repeat until you have used up all the crepe batter, adding more oil as needed.
Assemble the tiramisu crepes by spreading an even layer of the filling on top of a crepe, layering the crepes and filling until you have used up all the crepes. Dust the top with cocoa powder and enjoy!
Notes:
If you don't have a crepe pan, don't worry, you can use a good quality non-stick pan as well!
I highly recommend using sparkling water for this recipe, the crepes will have a better texture.
