This granola recipe is not only easy to make, it is also relatively cheap, meal prep friendly, healthy, and delicious. Make a big batch of this Easy Chocolate Granola and you won't have to worry about what to eat for breakfast for a week! This recipe is also a great way to use up any ripe bananas you have laying around in your kitchen.
Ingredients:
1 ripe banana
2 tbsp agave or maple syrup *
1/2 cup rolled oats
2 tsp cinnamon
handful of chopped walnuts
2 tbsp mixed seeds
handful of vegan chocolate chips
Instructions:
In a mixing bowl, mash the banana until smooth. Add the agave or maple syrup and mix.
Next, add the dry ingredients to the mixing bowl with your mashed banana and mix until well combined.
Transfer the granola mixture to a parchment lined baking sheet. Using a spatula, spread it out in an even layer and push down slightly.
Bake for 20-25 minutes, breaking up the granola into bigger chunks halfway through.
Sprinkle on top the vegan chocolate chips while the granola is still warm. Let it cool down completely before storing it in an airtight container or glass jar.
Notes: Store your granola at a dry space for up to a week, but I promise it won't last that long.
Serve with plant-based milk or plant-based yoghurt and fresh fruit.
Depending on how ripe your banana is, adjust the agave or maple syrup. *
