Vegan brownies can be a bit tricky to make, they often turn out cakey and not fudgy like how brownies are supposed to be. These brownies are not too sweet, chocolatey and most importantly perfect for this festive holiday season. You can get creative with it and add some crushed up candy canes, for example, to make them even more delicious and festive, but they are yummy just as they are too!
Ingredients:
1 cup white cane sugar
50g dark chocolate
1/2 cup vegan butter
1 1/2 cup flour
30g chopped dark chocolate / chocolate chips
7g baking powder
4 tbsp cocoa powder
pinch of salt
Instructions:
Sift the dry ingredients into a mixing bowl (flour, cocoa powder, baking powder, salt, sugar) and mix until the flour is all combined.
Fill a saucepan up with water a bit less than halfway through and let the water come to a gentle boil. Place a heatproof bowl over it, making sure the bottom of the bowl isn't touching the water, this is going to create a double boiler. Add the dark chocolate and vegan butter into the bowl and make sure to keep the water at a gentle boil. Melt the chocolate and vegan butter, whisking consistently.
Once it's nice and smooth and all melted, pour your chocolate and vegan butter mixture into the bowl with the dry ingredients and stir until just combined. It's important to not overmix! Fold in the chopped dark chocolate pieces or chocolate chips, depending on what you are using.
Pour the batter into a 20x20 cm baking pan lined with parchment paper. When cutting the parchment paper make sure to leave a bit to hang on the sides so it's easier to grab later on when the brownies are done baking.
Bake for around 30 minutes or until a toothpick comes out clean.
Let it cool before you cut it up! Don't make the same mistake I did, I know it's tempting and hard to wait but trust me it's worth it!
Notes:
I used 50% dark chocolate for both melting and the chopped up chocolate that's folded in the batter at the end, but feel free to use darker chocolate if you prefer. The only difference is that you might need to adjust the sugar, if using darker chocolate than 50%.
The batter shouldn't be too runny, but if you find it too thick add a splash of plant-based milk of your choice.
