Red Lentil Tofu | Easy and Soy Free

I saw the idea of making tofu from red lentils on TikTok first. I thought it was interesting, but I was a bit skeptical about it. Yet, I decided to give it a go and I was really surprised to see how easy it actually is. This Red Lentil Tofu is a cheaper, meal prep friendly version of regular store-bought tofu. It is easy to make and can be used just like tofu made from soy.



Ingredients:

  • 170g red lentils

  • 350ml boiling water

  • 480 ml room temp water

  • pinch of salt


Instructions:

  1. Soak the lentils for 15 minutes in boiling water.

  2. Next, transfer the soaked lentils along with the water into a blender. Blend the lentils until smooth, stopping to scrape down the sides as needed.

  3. Pour the blended lentil mixture into a saucepan, add the rest of the water and a pinch of salt. Let it heat up, over medium heat, whisking continuously until the mixture thickens.

  4. Transfer the mixture into a square baking dish and smooth out the top, using a spatula.

  5. Place it in the fridge to set for 35-40 minutes. The longer the tofu is in the fridge, the firmer it will be.



Notes:

Cut the tofu into your desired shape / size and use it in any recipe that calls for regular tofu.

To make firm or extra firm red lentil tofu, use less water.
