Crispy Potato Bites | 3 Ingredients

These Potato Bites are guaranteed to be a crowd-pleaser! Perfect as a cozy appetizer, side dish, or snack at any time of the year. They are crispy and golden brown on the outside and soft on the inside. Using some vegan cheese is optional, but highly recommended to make this recipe even more delicious.



Ingredients:

  • 10 potatoes, peeled and cut into bite size pieces

  • 1 tbsp smoked paprika, garlic powder

  • salt & pepper to taste

  • 3 tbsp neutral oil

  • optional: vegan cheese*


Instructions:

  1. Fill a large pot with water, cover with a lid and bring to a boil. Once boiling, add a generous pinch of salt and cook the potatoes until fork-tender.

  2. When the potatoes are cooked, drain and transfer into a mixing bowl. Mash the potatoes, using a potato masher or potato ricer. Add the oil and season with smoked paprika, garlic powder, salt & pepper. Mix until a soft dough forms. Using your clean hands, form little balls.

  3. Place the potato balls on a parchment lined baking sheet and bake for 20-25 minutes, until crispy and golden brown. Flipping halfway through.

  4. Serve warm with your favorite sauce and enjoy!



Notes:

*If you are using vegan cheese, put a little square of it in the middle of each, or just a few, of the potato balls.

This recipe makes about 14 balls, but this number might be different depending on the size of your potato balls.
