I like to make these roasted chickpeas, coated in yummy spices, when I want an easy to make snack that is also healthy and not junk food. You can not only make this recipe as a quick and easy snack, but it also goes well with a roasted veggie bowl. Chickpeas are so versatile, you can use them to make hummus, chickpea flour, falafel, chickpea 'tuna' salad or sandwich, and these yummy roasted chickpeas.
Ingredients:
400g can chickpeas
2 tsp each: smoked paprika, cumin, oregano, garlic powder
salt and pepper to taste
drizzle of oil
Instructions:
Drain and rinse the can of chickpeas, then transfer them into a mixing bowl.
Add drizzle of oil, seasonings, and mix to coat the chickpeas.
Place them onto a parchment lined baking sheet and spread the chickpeas out so they are not on top of each other.
Bake for 25-30 minutes or until they are crispy and lightly golden brown.
