Easy Vegan Chia Pudding with Ground Chia Seeds

This Chia Pudding is the perfect breakfast that you can prepare in advance and take with you to work or school. It is healthy, delicious, filling, meal prep friendly, and super easy to make. But this isn't your regular old chia pudding! This Chia Pudding is made with ground chia seeds! If you don't like the texture of whole chia seeds, try making chia pudding with ground up chia seeds. Making your chia pudding with ground - instead of whole chia seeds, will result in a much creamier, almost pudding-like texture and a smoother consistency.

What difference does using ground up chia seeds make?

Some people don't like the texture and consistency of regular chia pudding. Blending the chia seeds first, before mixing them with liquid, not only helps your body absorb more of the nutrients that are in chia seeds, but it also results in a different texture after the chia pudding has set in the fridge. Blending the chia seeds will give you a creamier and smoother texture.

Ingredients:

  • 30g chia seeds

  • 2 cups / 500 ml unsweetened plant-based milk of choice

  • 100g frozen mixed berries

  • 2 tbsp agave or maple syrup

  • 2 tsp cinnamon, optional


Instructions:

  1. First, add your chia seeds to a blender and blend for just a few seconds. Then set the ground chia seeds aside in a small bowl.

  2. Rinse out the blender, then add frozen mixed berries, unsweetened plant-based milk, cinnamon, and agave. Blend until smooth.

  3. Divide the plant-based milk and frozen berry mixture between 2 cups and add 3 tablespoons of the ground chia seeds to each cup. Mix well and place both cups in the fridge to set overnight or until your desired consistency is reached.

  4. Once the chia pudding has set, top with some fresh fruit of your choice, and enjoy!

Store in the fridge for up to 3 days.
